Hashigo Sushi with Toro Tartar

Recipe from: Head Chef Koji Hirano

Ingredients
serves 4
2 Tsp olive oil
1 Tsp soy sauce
1 Tsp sake
1 Tsp mirin
1 Tsp yellow powder
mustard
1 Tsp Sugar

Uni                2 oz
Minced toro        6 oz
Calviar            1 tsp
Mintleaf            4 pcs
Chopped white onion    1 oz

Preparation
Chop and mix thoroughly
Add ponzu sauce
Assemble ingredients as shown below.
